Test this great recipe from Mad Dog & Merrill:

Pineapple Boat

Serves 12

1 fresh pineapple     
1 apple
1 pear
1 banana
1 plum
1 kiwi
Seedless grapes
*Note: Choose any fruit; they do not need to be the above only!
1/4 tsp cinnamon
1/4 tsp nutmeg
2 heaping Tbsp brown sugar
2 heaping Tbsp flaked coconut
2 tbsp melted butter
2 tbsp dark rum (optional)

1) Slice pineapple in half lengthwise, cutting out the center core. Cut out the meat of the pineapple, forming a boat.

2) Chunk all the fruit, mix together and place back in the pineapple boat. Top with raisins, walnuts or pecans. Sprinkle on coconut and brown sugar. Add the melted butter, seasoned with the cinnamon and nutmeg. Now top with rum.

3) Grill over with indirect heat for 30-35 minutes. Spoon over vanilla ice cream.
